Moms are crazy for Carrot Cake!

I believe it may be the combination of sweet and spice that make carrot cake the quintessential dessert for Mothers Day. Or maybe it's just the cream cheese buttercream. Either way, carrot cake, especially this recipe that includes shredded coconut and crushed pineapple is divine for any Spring occasion. 


After icing the two cakes I then used the tops of each cake to make carrot cake pops! I put the remainder of the cake in a food processor with a bit of cream cheese, rolled them into balls, and dipped them in white chocolate and walnuts and volla! Carrot cake pops!
